一、“安化黑茶”的价值和魅力

正宗“安化黑茶”是采用安化内山区大叶群体品种鲜叶为原料，经过杀青、揉捻、渥堆、烘焙干燥、整形等独特工艺加工制成的黑毛茶及其系列产品。其干茶色泽乌黑油润，汤色橙黄，香气纯正，滋味醇和，降脂效果十分明显。 1.特定区域的大叶茶原料，决定了安化黑茶的特定品质。 安化是大山区,位于湘中偏北,属亚热带气候,年平均气温16.2℃，年平均降雨量1668毫米，无霜期274-287天，气候温和，冬暖夏凉，昼夜温差大，四季分明,雨量充沛,境内资水两岸的山体覆盖着厚厚一层由板页岩分化而成的土壤，土质肥沃，且崇山峻岭，山脉延绵，云雾缭绕，拥有非常适宜于茶树生长的自然条件，有“山崖水畔，不种自生”的环境，在这种独特的自然环境和这种环境下所产生的有独特优良品质的安化大叶茶群体品种。“云台大叶茶”就是于1965年公布的国家级优良茶树品种。

安化是一块出产“安化黑茶”的宝地，正象只有在贵州茅台镇用茅台镇原料和水生产的茅台酒一样，“安化黑茶”只有用安化境内所产的原料加工制作，才有独特的品质和特殊的风味，安化黑茶具有很强的地域性。

在全国以县命名的茶仅“普洱茶”、“祁门茶”、“安化茶”三种。在我国的大学茶叶教科书中，安化茶是作为一个专门茶类介绍的。由于安化茶叶原料有独特品质和特殊风格，按照绿茶加工程序去加工，就可以精制成“安化松针”、安化银(金)币、安化银毫、云台春芽等名绿茶，其中“安化松针”是全国名绿茶之一;按照红茶加工程序去加工安化红茶，以其优良品质运销俄、英、法等西方国家，1915年，安化红茶在巴拉马国际博览会上与贵州茅台酒同获金奖;按照黑茶加工程序加成安化黑茶，以其独特品质和特殊风味，明清至民国，在西北市场有几百年的历史。据史料记载，明清500多年，安化成为了中国黑茶中心。其间，中国五个黑茶产地省，平均产量比例是：湖南(黑茶)占40%，四川(乌茶)20%，广西(六堡茶)15%，云南(普洱茶)15%，湖北(老青茶)10%。安化在清朝时，最盛年产黑茶达14-15万担，红茶70万箱，湖南省的茶80%产在安化。

2、“安化黑茶”数百年成熟的传统独特工艺更新显其品质价值。

“安化黑茶”之所以独特，除了有优质的茶叶原料外,另一个原因是其加工工艺独特,如渥堆发酵、七星灶松香熏制毛茶等方法。安化人民利用这些传统成熟的独特工艺，加工制作出了世界茶王千两茶，中国第一块安化黑砖茶，中国第一块安化花砖茶，湖南第一块安化茯砖茶，以及安化天尖、贡尖、生尖茶等。没有安化原料，无法加工出正宗“安化黑茶”，没有“安化黑茶”这些传统成熟的加工技术，不可能成就安化黑茶上千年的昔日辉煌。安化原料与安化黑茶独特工艺珠联璧合，使“安化黑茶” 蜚声海内外。

3.茶马古道重要发源地之一，见证了安化黑茶的特殊历史地位。 明代以前，边销茶以四川官茶为主，安化黑茶属于私茶，不能随意边销。但由于安化黑茶滋味浓厚醇和，适合边民的口味，深受边区少数民族喜爱，茶商们就绕道湖广集聚安化设站收茶。使川引由两万多锐减到一二十。明万历二十三年(公元1595年)，御史李楠以“安化黑茶”边销西北妨碍茶法马政为由，请求朝廷禁运。御史徐侨上奏称：“汉川茶少而值高，湖南茶多而值下，湖茶之行(销)，无妨汉中。汉茶味甘而薄，湖茶味苦，于酥酪为宜 ”。认为湖南茶对西北游牧民族有利，不宜禁止。自此，在明万历二十三年，安化黑茶终于由朝廷定为官茶，以“取代汉川之茶，贮边易马”。直至清代，西北地区“边茶”，十之八九由安化供应，西北边销逐渐由安化黑茶所取代。“安化黑茶”定为官茶后，晋、陕、甘等地茶商纷纷来安化办茶，从明清至民国，安化资水沿江一带的苞芷园、小淹、边江、江南、鸦雀坪、唐家观、酉州、黄沙坪、桥口、东坪、马辔市等地茶行、茶庄、茶号林立，兴盛时，多达300余家，白天人潮如海，车水马龙，夜晚灯火通明，歌舞升平。光绪戊申秋八月，陕西试用知县刘翊曾在黄沙坪赋诗： “茶市斯为最，人烟两岸稠”。 在没有火车、汽车运输之前，从安化运茶至山西祁县、 至陕西泾阳，又远运至西北恰克图、乌鲁木齐、伊犁等地区，形成了历史上的茶马古道，骆驼古道，有“晋商万里茶路源起地”之说，并成就了大德诚、大德兴、大德丰、永聚祥、大玉川、巨盛永、长裕川等重要商贾。

明清至民国，随着茶叶兴旺，茶市弊生，有掺假、掺杂，“外路茶”掺入“道地茶”等。为确保正宗安化黑茶质量和信誉，维护茶商和茶农利益，历代政府十分重视对“安化黑茶”的保护和管理，刻石碑、立章程。类似古代的禁碑在安化随处可见，较早的是雍正八年的“苞芷园茶叶禁碑”：禁外县茶贩子装假混安杂卖;禁本地人等贩运异属草茶，拥塞本地;禁产货茶户掺假，蒙混外省客商;禁船货装载私贩假茶入境。 这些禁碑、规定，不仅对当时“安化黑茶”这一品质保护和提升起了积极作用，就是在今天依然有着重要的实现借鉴意义。
